Knowing, where our ingredients are coming from, is important to us. Making sure that they haven’t already travelled halfway around the world before they end up in our kitchen. That is why we source most of our products locally, from farmers and producers we know and where we can rely on the quality. You will taste the difference. Authentic aromas and down-to-earth enjoyment.
Commercially available produce is often picked before it is ripe to make sure it endures the long journey. We want to avoid that. Sun-ripened and fresh from the trees or the fields, the produce comes to us from farmers and suppliers in the region - Tyrol or the neighbouring Allgäu and Bavaria. According to the season we spoil you with fresh asparagus, mushrooms or berries, refined with aromatic herbs from our garden. Boiled, pickled or frozen, these delicacies will naturally taste of spring, summer and Tyrol for even longer.
We work together with strong partners in the region, supplying us with the best locally-sourced produce. The Brotquelle bakery (Ehrwald) and the Gurgltalbrot bakery (Nassereith) bake our bread and pastries. The beer is brewed in the Zillertal Bier Brewery. Potatoes are harvested on the fields of the Kapeller family in Mieming. Our mineral water comes from the Privatquelle Gruber GmbH & Co KG (Brixlegg). The cheese specialities come from the Dairy Kloster Ettal, the Tuftl Alm and Ziegenpeter Hof in Ehrwald, that also makes ice cream for us.
