Commercially available produce is often picked before it is ripe to make sure it endures the long journey. But that is not the way we do it. Matured in the Tyrolean sun, and harvested in the fields and in the orchards of farmers and suppliers of the region, the ingredients for our cuisine reach our hotel. Transported here from the Tyrol or the neighbouring Allgäu and Bavaria. According to the season we showcase best locally-sourced produce like asparagus, fungi or berries, perfected with the aroma of herbs from our garden. To offer you the taste of summer, of sun and the Tyrol at any time of the year, we preserve the authentic taste by boiling, pickling and freezing.
We work together with strong partners in the region, supplying us with the best locally-sourced produce. The Rabitsch bakery (Ehrwald) bakes our bread and pastries. The beer is brewed in the Zillertal Bier Brewery. Potatoes are harvested on the fields of the Kapeller family in Mieming. Our mineral water comes from the Privatquelle Gruber GmbH & Co KG (Brixlegg). The cheese specialities come from the Dairy Kloster Ettal, the Tuftl Alm and Ziegenpeter Hof in Ehrwald, that also makes ice cream for us.
