We focus on locally-sourced produce, on naturalness and a careful use of resources, as we want to contribute to the preservation of the natural beauty of our region. We know where the ingredients for our gourmet dishes come from. We choose carefully from a wide variety of fantastic products and surprise you with the finest aromas. Local farmers and producers supply us with the best of the surrounding fields and farms. We reduce our CO2 footprint with these shorter transport routes and make sure that all these delicacies arrive in our kitchen fresh. We don´t serve wines from overseas and offer you authentic pleasures for all senses.
So that you too know where we get our delicacies from, here is a small overview of our local suppliers: the Rabitsch bakery (Ehrwald) supplies us with bread and pastries. The eggs come from happy chickens at BieZu and the Kaltschmid farm (Ehrwald). The beer comes from the Zillertal Bier brewery and the sausage specialities from Hörtnagl. Our potatoes are harvested on the fields of the Kapeller family in Mieming. Our mineral water is supplied by Privatquelle Gruber (Brixlegg) and the milk is from Tirol Milch. Our cheese specialities are produced at the Tuftl Alm (Lermoos), the Kloster Ettal and the Ziegenpeter Hof (Ehrwald) who also supplies us with ice cream.
Sustainability does not end in the kitchen. We have 5 electric charging stations (two of them for Tesla) for your electric vehicle and e-bikes can be rented from one of our partner companies. We obtain the energy for heating and hot water from pellets, which consist of renewable and CO2-neutral raw material - wood. Even on a small scale, we try not to ask too much of our environment - by avoiding waste, by carefully sorting waste, by saving resources, and by using LED lamps.
